Explain the effect of water activity on microbial growth and survival.
Water activity (Aw) refers to the availability of water in a food product, which affects its ability to support the growth and survival of microorganisms. It is defined as the ratio of the vapor pressure of water in a food to the vapor pressure of pure water at the same temperature.
The water activity of a food product determines the conditions in which microorganisms can grow and survive. Microorganisms have specific water activity requirements, and their growth and survival is influenced by the Aw of their environment. Generally, microorganisms can be classified into three groups based on their water activity requirements: obligate psychrophiles, facultative psychrophiles, and mesophiles.
Obligate psychrophiles: These microorganisms require a low water activity for growth and survival, typically less than 0.92 Aw. Examples include Listeria monocytogenes and Yersinia enterocolitica. These microorganisms are found in refrigerated and frozen foods and are able to grow and survive in these conditions.
